One of my resolutions for the New Year was to be more aware of my dietary choices and how they affect my body. One of my Christmas presents was a vegetarian cookbook, which I was very excited to receive. I’ve tried a few of these dinners, but there are some I’ll still looking to make soon. Here are my favorite vegetarian dinners for January 2020!
Trader Joe’s Creamy Tomato Soup with Cauliflower Gnocchi and Spinach
You can get all three of these ingredients from Trader Joe’s, which makes shopping for this dinner easier than most. I love the combination of these items for making something filling yet healthy and low-calorie. TJ has two different tomato soups, a creamy one and creamy soup with less sodium. I love that TJ offers different options for their shoppers so that they can find what they want and need. The cauliflower gnocchi is also nice, and TJ has a bunch of different types besides cauliflower. I add the spinach for added green and nutrients!
Black Bean and Avocado Wrap
This is another recipe where you can find everything you need all in one place! I love the convenience of these types of recipes because it makes things so easy for me. This is one of those meals where you make it in the morning and bring it with you to work or school to enjoy for lunch. I have linked the recipe here. I look forward to making this when school starts up again! Meal prep is one of the biggest things for being healthy the majority of the time.
Cauliflower Tikka Masala
I have always been a lover of Indian food and when I went vegetarian, I knew I was going to miss my favorite dish: chicken tikka masala. When I found this recipe, I was intrigued and wanted to try it. As I’m writing this, I’m adding the ingredients to my shopping list! Here is the link to the recipe I found. This dish is also vegan, meaning it fits a variety of diets (including mine!). This is such a healthy alternative to some other Indian options and I was happy to find it!
These are the vegetarian dinners I’ve been making and wanting to try so far this month.
